Grandma’s Easy Banana Bread

You will love my Grandma’s tried and true (and EASY!) banana bread recipe that is a classic favorite!  Perfectly sweet, moist and full of delicious banana flavor! 
What a beautiful SNOWY weekend we had up here in Northern Virginia!  I don’t know about you, but a lazy snowy Sunday always puts me in the mood to bake and since my bananas we perfectly ripened I thought it’d be the perfect time to make this banana bread.

This has been one of my favorite recipes since I can remember and I have to give my Grandma ALL the credit.  She literally makes the best banana bread (among her many talents) and it was always a staple in her home when I was growing up.  This recipe is literally SO easy to make and the bread comes out incredibly moist which is why I love it so much!  Now for the disclaimer.  This of course isn’t the healthiest recipe, but hey all things should be eaten in moderation anyway, right??  I’ve tried modifying this recipe several times to make it a bit healthier, but it just never comes out the same so I wanted you all to have the original recipe 🙂

Plus isn’t good to just have a staple bread recipe in your arsenal that you can whip out when you want to impress friends and family??  Trust me this is definitely it.  Now there are plenty of healthier options on my blog, like this zucchini bread or even this pumpkin bread, so if you’re sitting there frustrated that this recipe contains butter and sugar, you are MORE than welcome to move on to my other recipes.  This classic favorite is just too good not to share with you all!

The great thing is this batter makes one large loaf or three mini loaves, depending on what you prefer.  I ended up doubling this recipe so we’d have one loaf for our home and made three mini ones to give to our neighbors since all of us seem to be stuck inside on this snow day.  It’s the perfect little indulgence that is much-appreciated on cozy weekends and feel free to make this recipe all your own by adding chopped walnuts, pecans or even chocolate chips!

Grandma’s Easy Banana Bread

Serves: 12 servings

Ingredients
  • ½ cup (1 stick) butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 tsp. vanilla
  • ½ cup sour cream (or plain Greek yogurt)
  • 1 cup mashed bananas (about 2 bananas)
  • 1½ cups all-purpose flour
  • 1 tsp. baking soda
  • ½ tsp. salt

Instructions
  1. Preheat oven to 350 degrees F.
  2. In a stand mixer, or hand held, mix together softened butter and sugar until well combined. Then add in eggs and mix well. Next add in vanilla, sour cream (or Greek yogurt) and mashed bananas then, while the mixer is on, slowly add the flour, baking soda and salt and mix slowly until completely combined, scraping the sides and the bottom.
  3. Pour batter into prepared loaf pan (or pans). If using one 9×5 loaf pan, bake bread for about one hour. If using three mini loaf pans, bake bread for about 45 minutes, or until a toothpick inserted into the center comes out clean.
  4. Let the bread sit for 10 minutes then remove from pan and let cool completely on a wire rack. Serve and enjoy!

Ever just crave dessert for breakfast??  Well then this recipe is definitely for YOU.  It doesn’t get much better than that sweet nutty flavor you get from all things salted caramel so why not let that be the first thing you enjoy when you wake up!  The reason I love making overnight oats so much is that they take less than 5 minutes to make the night before and you can just wake up, add your favorite toppings and indulge!  Perfect for busy people on the go who don’t have a lot of time in the mornings to spend cooking, or I mean just lazy people too…no judgment at all 😉

This recipe also has a delicious banana flavor too which not only makes these oats creamier, but I’m pretty sure I will now forever drizzle caramel sauce over my bananas from this point forward.  It just tastes THAT good!

OH and can we talk about this rich and creamy caramel sauce?!  I literally just wanted to eat the whole thing with my spoon.  Zero shame.  This sauce is super simple to make and only takes about 3 ingredients, which is a much healthier alternative to store-bought caramel sauce.  It’s also easily made the night before as well OR you could make this right before eating your overnight oats if you prefer drizzling the warm sauce over top while it’s fresh off the stove.  The key to making this sauce is cooking it low and slow for about 40 minutes until it becomes thick and creamy so keep that in mind when deciding the best time to make this 🙂

This caramel sauce is vegan, gluten-free, and dairy-free and can also be stored in the fridge for up to two weeks so use this sauce however you’d like!  I usually only drizzle about a tablespoon over top of my oats, obviously not the entire recipe you see below, so finding creative ways to use the leftover sauce is really fun.  Your kids (and YOU) can enjoy dipping apple slices in it, topping your favorite ice cream or even drizzling over pancakes!

The great thing about making overnight oats is that there is absolutely NO COOKING involved at all.  You just mix all your ingredients together the night before and wake up to a delicious breakfast!  Just remember anything you add to these oats will become absorbed overnight so if you like a good crunch you’ll want to wait and mix those in right before eating.  There are endless amounts of toppings that you could add to these oats, but for this particular recipe I sprinkled some chopped cashews, cacao nibs, some sliced bananas, and of course a drizzle of delicious caramel sauce!

Obviously this is not a breakfast I would suggest eating every day because it is definitely more dessert-based, but it IS delicious and just too good not to share with you all!

These overnight oats with homemade caramel sauce are dairy-free, refined-sugar free and vegan and made with all clean, wholesome ingredients.  A delicious breakfast (or dessert!) made in just minutes the night before that you can easily grab and go the next day!  Hope you all enjoy this recipe as much as I did!

Salted Caramel Overnight Oats

 

  • ⅓ cup rolled oats
  • ¼ cup unsweetened almond milk
  • 2 Tbsp caramel flavored almond creamer
  • 1 Tbsp chia seeds
  • ½ banana mashed
  • ½ tsp. cinnamon
  • Toppings: cacao nibs, chopped cashews, banana slices & caramel sauce
  • 1 cup full fat coconut milk
  • ⅓ cup coconut sugar
  • ½ tsp. sea salt
  • ½ tsp. vanilla extract (optional)
  1. Combine all ingredients (except for toppings) mixing well, cover tightly with a lid or plastic wrap and refrigerate overnight.
  2. To make the caramel sauce, combine coconut milk, coconut sugar and sea salt in a small saucepan and bring to a boil over medium-high heat. Once it starts to boil, reduce the heat and let the sauce simmer for about 40 minutes, stirring occasionally. (You may want to stir the sauce more frequently in the last 5 minutes to avoid the bottom from burning)
  3. Remove caramel sauce from heat and mix in the vanilla extract. Sauce will thicken as it cools.
  4. Spoon a tablespoon or two over top of the oats and store the leftover caramel sauce in a sealed airtight container in the fridge.
  5. Top the overnight oats with cacao nibs, chopped nuts and banana slices if desired. Enjoy!

Summer is my absolute favorite time of the year which means it’s officially GRILLING season!  Our grill is always in constant use during the spring/summer months because it’s just so easy to use with little clean-up and I don’t know about you, but everything just tastes so much better coming off of the grill!  Not only can you grill chicken, fish, steak, kabobs, I mean you name it, but guys, grilling pizza might just be the best thing you do all season.

One of my favorite things to do in the summer is host events in our backyard and since building our home last year, having friends and family over has been the best part of our move!  If you follow me on Instagram then you know how I love to throw a good party and with that comes making delicious food!  Grilling is essential for an outdoor gathering and it’s nice to mix things up sometimes.  Instead of serving up the usual summer favorites, having your guests make their own personal pizzas can be way more fun!

When deciding on pizza toppings I am ALL about flavor combinations which is why I knew I needed Aidells® Dinner Sausage on my pizza.  I’ve been a huge fan of Aidells sausage links for quite a while now not only because they are crafted in small batches using the highest quality of meats and all-natural ingredients, but they are also made with no added hormones or nitrites so you can really feel good about what you are eating!

Aidells carries several delicious products all with unexpected flavor combinations such as bacon mushroom swiss, sun dried tomato with mozzarella, Cajun style andouille and even habanero with pepper jack cheese.  For this particular recipe I used Aidells smoked chicken and apple sausage links that contain their trademark spice blend along with delicious chunks of apple in every bite!

As you can see above, for a limited time, each package of Aidells sausage links currently has a sticker containing a unique summer recipe so make sure to look for that on the packaging the next time you’re at the store!

To really bring out that apple flavor in this sausage, I topped each pizza with some fresh apple slices along with goat cheese, baby arugula and finished it off with a drizzle of sweet honey vinaigrette.  If you’re not a fan of goat cheese, feel free to use some gorgonzola (which tastes delicious with apples!), burrata or really any cheese you prefer.  This pizza turned out incredible and was the perfect sweet and savory combination!

If you’re making pizza at a backyard cookout or even on a camping trip, it’s important that you pre-chop all of your toppings ahead of time.  I pre-sliced all the apples and put each of the toppings into individual containers so that assembly would be nice and easy for everyone!  We grilled the chicken sausage right there on the grill and sliced it up right before adding it to the pizzas.

To make the honey vinaigrette, I whisked together a little olive oil, some honey, Dijon mustard and fresh lemon juice and drizzled it over top of the pizza and arugula which really gave the pizza a sweet, fresh taste!  If you have any extra dressing left over, make sure to save it because it tastes great on salads too.  I actually make this vinaigrette a lot which is why I wanted to use it on this pizza.  A definite tried and true dressing that just tastes delicious on everything!

Now if you thought that was easy to make, grilling the actual pizza is even easier!  To keep things simple we used naan flatbreads that were brushed with a little olive oil.  Naan crisps up so nicely on the grill and is the perfect size for individual pizzas.  The key though to a good grilled pizza is placing the toppings on the pizza while it sits on the grill!  You’ll want to grill the naan first before adding any toppings, about 2 to 3 minutes per side, until you see some nice char marks and this is also a good time to go ahead and cook your sausage.  Then once the naan is ready, just add your cooked sausage, apple slices and goat cheese grilling for an additional 4 to 6 minutes until the cheese is nice and gooey!  Easy right??

This pizza is definitely a new summer favorite and one I can really enjoy eating because of all the fresh flavors and quality ingredients.  I purchased all of these ingredients at my local Safeway. Grilled Sausage & Apple Pizza with Goat Cheese

Serves: 8 Servings

Ingredients
  • 4 whole grain naan flatbreads
  • 2 Tbsp olive oil, for brushing
  • 1 (12 oz) package Aidells Chicken & Apple Sausage
  • 2 cups thinly sliced apples (I used Fuji)
  • 8 oz goat cheese
  • 2 cups baby arugula
  • Salt and pepper, to taste
For the honey vinaigrette:
  • 1 Tbsp olive oil
  • 1½ tsp. honey
  • 2 tsp. dijon mustard
  • 1 tsp. fresh lemon juice

Instructions
  1. Preheat a grill or grill pan over medium high heat.
  2. Brush each naan flatbread on both sides with olive oil and place on the grill for 2 to 3 minutes on each side, until you see some char marks.
  3. While the naan is grilling, cook the sausages for 8 to 10 minutes until heated through, turning occasionally. Remove from grill and cut into ½-inch slices.
  4. When the naan is ready, top with goat cheese (2 oz on each flatbread), apple slices and chicken sausage and grill for an additional 4 to 6 minutes until cheese is slightly melted.
  5. To make the honey vinaigrette, whisk together olive oil, honey, dijon mustard and lemon juice and set aside.
  6. Remove pizzas from the grill, top with fresh arugula and drizzle each with honey vinaigrette. Season with salt and pepper, if desired. Serve and enjoy!
